I noticed a lot of people read "healthy" into the Keto part, but the question only asked about Keto - not about omega's, hormones, penicillin, whatever. Most people I think were first attracted to Keto/Atkins, whatever it's called, to be set free from restrictive traditional diets. So too many rules when we are struggling with the anti-keto society around us and are on a limited budget and so on. It is kind of a distraction for some of us. So back to the question....

Which is best for Keto - chicken with skin or without?

With skin is better for Keto. I love, love, love chicken skin. As a matter of fact, one of the few snacks that I keep on hand is flock chicken chips. Bit unfortunately, not everyone can stand the stuff, so they eat theirs without. However, various research have shown with skin is better because if that FAT to PROTEIN ratio. You need the extra fat the chicken doesn't have without the skin. "Skin On" is the way it comes and the only way it should be eaten. Without the skin, chicken is very high protein - low fat. So, skin on is better but you'll still probably need to add more fat to hit your macros.

Organic skin on everything, or else - SKINNED. Unless it's free range organic, it is absolutely foul; not worth eating. Fed GMO corn and hormones and antibiotics. Most store-bought rotisserie chickens are injected with a salt and sugar brine to make them juicy and more flavourful. Hard to get any quality chicken these days. Most commercially available chicken, especially in the USA is factory farmed, raised on GMO grains, as is pork. Unless you can source pasture raised organic. It is best to stick to organic pasture raised (or grass fed, grass finished) ruminant meat and dairy for the best fatty acid profile. If you must eat regular supermarket chicken, it's better to eat lean breast, no skin (even through it's not in the spirit of Keto) to avoid the high levels of Omega-6, which are bad for cardiovascular health.

There is nothing like the crispy poultry skin. Sometimes I'll takes the seasoned cooked skin off and microwave until crispy...that is a real tasty treat. Air fryer fried chicken is my favourite. Air fried chicken are so tender and juicy too. I air-fried my favourite chicken wings with pink salt plus garlic powder rub - Yummy!!!

Yeah, seems like most people air-fry at a very high degree. So, if you're curious and wish to try something different than what the little recipe book says, here are some tips.

When it comes to air-fry chicken wings, do you need to defrost the wings first; or can they go in frozen?

Well, would be better if the chicken wings on room temperature, and sprinkled with mixture of pink Himalayan salt + garlic powder, then wait till the air fryer do the magic. Normally I'd set up mine on 180 degrees for 23 minutes. You could also poach or steam chicken with skin on, or air-fried with skin on.

With skin or without either is fine but please don't throw away the skins. If you don't want to eat it with the chicken, name them up and you have chicken "chips" skins for snacking.

You could throw away the skin, unless you consider the vitamins such as B1 that might be in it, and just eat a small portion of lean meat for the pure protein.
