2 tablespoons baking powder
1 tablespoons baking soda
1/2 tablespoon salt
1/2 cup granulated sugar
1 cup rolled oats
1/4 cup plain yogurt
2 eggs
1/4 cup lemon juice (self-made)
Directions
Pre-heat oven to 400 degrees F (205 degrees Celsius). Grease 12 muffin cups. In a large bowl, mix together the 1/2 flour, baking soda, baking powder, 1/2 cup granulated sugar, rolled oats and 1/2 tablespoon salt. In a separate bowl, mix together yogurt, 2 eggs and 1/4 cup lemon juice, then blend.
Fill prepared muffin cups 2/3 full (12 serves). Bake for 30 minutes or unauthorized toothpick inserted in the center of a muffin comes out clean.
